Creamy High-Protein Overnight Oats (no protein powder)

Creamy, delicious high-protein overnight oats. The perfect make-ahead breakfast!

Ingredients

  • 1/3 cup organic rolled oats
  • 2 tablespoons hemp hearts
  • 1/2 tablespoon ground flaxseed meal
  • 2 teaspoons chia seeds
  • Cinnamon, optional
  • 3/4 cup milk (I use Silk soy milk, unsweetened)
  • 1/3 cup yogurt (I use Kite Hill Greek style plant-based yogurt, unsweetened vanilla)
  • 1 tablespoon nut butter (I like almond butter)
  • 1 teaspoon maple syrup, optional
  • 1/2 cup frozen blueberries + raspberries (thawed)
  • 1 handful freeze-dried strawberries (adds a nice crunch)
  • Chopped walnuts

Instructions

1. Combine the oats, hemp hearts, flaxseed, chia seeds, cinnamon, milk, yogurt, and nut butter in a bowl or large mason jar. Stir together until smooth. Cover and refrigerate overnight, or up to 5 days.

2. In the morning, microwave the frozen berries for 45 seconds. Stir the thawed berries and walnuts into the oats. Top with the freeze-dried strawberries, or any other desired toppings. Enjoy!
