Perfectly Chewy, Ultra-Creamy Stovetop Oats

The secret to perfectly cooked oatmeal: equal parts steel cut oats and rolled oats, a slow simmer, and a short rest. Follow this simple formula for perfectly tender, creamy oats. Can be served savory or sweet.

Ingredients

3/4 cup water

3/4 cup milk (I prefer soymilk)

1/4 cup rolled oats (not quick-cooking or instant)

1/4 cup steel cut oats

1/2 teaspoon flaky sea salt

Optional toppings: brown sugar or maple syrup, flaxseeds, hemp seeds, chia seeds, berries or sliced bananagranola

Instructions

1. Combine water and milk in a small pot and set over high heat. Once liquid develops small bubbles around the outside edge of the pot, add salt and both types of oats. Be careful not to boil the liquid as this can scald the milk. 

2. Stir and lower the heat to medium-low. Continue to tweak the heat to maintain a gentle simmer. Stir frequently for 15 minutes. 

3. Remove from the heat. Stir in desired toppings. Then cover and rest for 5-10 minutes.

4. Spoon into bowls. Pour milk around the edges and sprinkle with a pinch of sugar or a drizzle of maple syrup. Add your favorite toppings. Enjoy!

Notes

  • I recommend using organic oats as they are grown without synthetic pesticides (like glyphosate), fertilizers, or GMOs.
