Sugar cookies with a hint of pumpkin — the perfect fall dessert! They’re lightly sweetened and warmly spiced. These cookies are delicious as is, but can be elevated with a pumpkin buttercream frosting. I love them both ways! The frosting recipe calls for pumpkin butter. I didn’t have any on hand but wanted to create a pumpkin frosting, so I used pumpkin puree. I reduced the amount to ½ tablespoon and the pumpkin flavor was very subtle, so next time I’ll use 1-1 ½ tablespoons puree. Made in one bowl, these cookies are so simple yet so delectable!
