If you’re a fan of spinach artichoke dip, you’ll love this soup. Filled with spinach, leeks, artichokes, silky cannellini beans, cashew cream, nutritional yeast, and miso paste, it’s every bit creamy, dreamy, and delicious! My four-year-old loved it so much she came back for seconds (that rarely happens!), then continued to ask for it the next few nights. She calls it the “yummy green soup.” So cute! It’s definitely a recipe I’ll be making again!
