Shredded tofu is a great meat alternative for wraps, tacos, and sandwiches. This recipe uses a delicious blend of spices — oregano, cumin, cinnamon, smoked paprika, onion powder, garlic powder, salt, and pepper — to flavor the tofu.
If you want to keep the shreds in bigger chunks, toss very gently when mixing with the spice rub. It might even work better to lay them out on a sheet pan, drizzle with oil, and then gently rub in the spice mixture. Don’t worry about trying to peel the tofu into equally sized shreds. The variety of sizes creates an interesting blend of textures.
Serve tucked inside warm pita or lavash bread with a Mediterranean-inspired salad, fresh herbs, and tahini dressing.
